SFWLC: Grilled Flank Steak with Chef Bill's Chimichurri Sauce

Four to five ounces per person are recommended

For a family of four, Chef Bill recommends four to five ounce servings per person. 

Cut this about the thickness of a nickel, across the grain, to serve. 


Cook medium rare

Broiled - 3 minutes per side

Stovetop Sear - 5 minutes per side

Grill Sear - 5 minutes per side


1 fresh bunch parsley

1 fresh bunch cilantro

1 fresh bunch mint (if fresh isn't available, use 2 containers)

4-5 cloves of garlic, peeled

1 1/2 c extra virgin olive oil

1/4 c red wine vinegar

1 tbsp dry oregano

Cayenne powder to taste

Salt to taste

Blend all ingredients in a food processor until the consistency of thick apple sauce. Add more olive oil if needed. Chef Bill says you want it to be a little thick and chunky.

Serve on a bed of rice and beans with Chef Bill's Chmichurri Sauce
