1 apple ½ tablespoon butter 1 teaspoon brown sugar 1/8 teaspoon cinnamon ¼ cup granola 1 scoop vanilla ice cream or frozen yogurt
Cut apple into quarters and cut out core. Slice each quarter in half to make 8 wedges. Place in a microwave safe bowl. Thinly slice butter and place on top of apples. Sprinkle with cinnamon and brown sugar. Top with granola. Microwave on high for 1 minute and 30 seconds. Carefully remove from microwave and top with scoop of ice cream. Serve immediately.
Toffee Apple Dip
¾ cup brown sugar ½ cup powdered sugar 1 teaspoon vanilla 1 8oz package of cream cheese ¾ cup toffee bits Sliced apples to dip
Combine first four ingredients in a mixing bowl. Mix at medium speed until smooth. Carefully stir in toffee bits. Cover and chill for 1 hour. Serve with sliced apples.
Colossal Caramel Apples
1 bag caramels 2 tablespoons water 5 small apples 2 cups Reese's Pieces ½ cup chocolate chips ½ cup white chocolate chips
Unwrap caramels and put into a microwave safe bowl. Add water and heat on high for 3 minutes or until completely melted. While caramel is melting, wash and thoroughly dry apples. Push a wooden stick, usually included with the caramels, into the bottom of each apple, set aside. Remove caramel from microwave and carefully dip each apple into the caramel to cover completely. Raise the apple out of the caramel, and swirl until caramel begins to set. Roll bottom half of apple in Reece's Pieces then place on a cookie sheet lined with waxed paper. Allow to cool for 10 minutes. Melt chocolate chips and white chocolate chips separately and place each in a plastic sandwich bag. Snip a small corner off of each bag. Drizzle chocolates around each apple. Let chocolates harden, about 20 minutes, then serve.
