Gazpacho-- Sid and Diane's

4 Cups diced tomato
1/2 cup each:  chopped Cucumber, Onion and Sweet Red Pepper
1 tsp fresh garlic, minced
1/2 Cup tomato juice or V-8 juice
1/4 Cup Extra Virgin Olive Oil
3 Tablespoons Sherry, Red Wine, White Wine or Balsamic Vinegar
1/4 Cup Fresh Basil, Julienned
Salt and Pepper to taste

Combine all and refrigerate.  Serve chilled with good french bread!
