Grilled Chicken with Fresh Fruit Salsa

Grilled Chicken Breast with fresh fruit salsa:

Fruit Salsa:
1/4 Fresh Cantaloupe
1/4 Fresh Pineapple
1/4 Fresh Honeydew melon
1 - small bunch grapes cut in half
1 - Red onion Diced
1/2 - Red, orange, and yellow pepper (roasting is optional)
Jalapeno pepper to taste
2 Tablespoons Rice wine vinegar
3 - Tablespoons Cilantro
1 - lime Juiced
Salt and pepper to taste


1. Dice fruit and vegetables and combine into a bowl.
2. Add Rice wine vinegar and lime juice.
3. Season with salt and pepper to taste

Grilled Chicken breast:

4 boneless skinless chicken breast
Oil to saute

1. Preheat grill pan with oil
2. Mark the chicken breast with cross hatch pattern
3. Turn chicken over and cook till firm and completely cooked.
