Grilled Chicken Salad with Bruschetta Salad


Ciabatta Toasts 8 each
Caesar Dressing About 1/4 Cup
Parmesan Cheese Generous Pinch per toast
Burrito Chicken 1 Portion

Spring Lettuce Mix

1 1/2 Cups

Chopped Romaine

1 1/2 Cups

Balsamic Vinegar 2 oz.
Ripe Olives About 1/4 Cup
Crumbles Bleu Cheese About 1/4 Cup
Tomato Onion Relish

1 1/2 Cups

Parmesan Cheese Garnish


Place chicken breast in microwave to heat.

  1. Heat chicken breast in microwave.
  2. Place ciabatta toasts on a lined half sheet pan and brush with Caesar dressing and sprinkle with parmesan.
  3. Place toast in broiler or salamander.
  4. Toss spring mix and romaine in balsamic dressing.
  5. Place a small amount of the mixed greens on an oval platter.
  6. Pinwheel the brushetta pieces around the salad.
  7. Toss the remaining salad with olives, blue cheese, and grilled chicken and place on the salad base.
  8. Top with tomato onion relish and sprinkle with parmesan cheese.
  9. Serve and enjoy!
