Shrimp Scampi


            7  u-15             shrimp, peeled and deveined

            2.5 oz               artichokes

            1TBSP             sundried tomatoes

            ½ oz.                white wine

            2 oz.                 chicken stock

            1 tsp                 minced garlic

            1 tsp                 minced shallots

            1 TBSP            parsley

            To taste            salt and pepper

            1 TBSP            oil

            1 oz.                 herb butter

  • 1. Heat oil in sauté pan, add seasoned shrimp, garlic and shallots
  • 2. When garlic begins to lightly brown, add white wine and chicken stock
  • 3. Add sun died tomatoes and artichokes
  • 4. Reduce liquid until 2 TBSP are left, add herb butter and parsley
  • 5. Remove from heat and stir all ingredients until butter has melted and has a sauce consistency.
  • 6. Adjust seasoning.
