Breakfast or Brunch Quesedilla

6 Eggs-- Scrambled, not overcooked
1 Cup Cheddar Cheese, grated
1/2 lb. Sausage-- *Hot Bob Evans* e.g. browned and crumbled
2 Large Flour Tortillas

Heat frying pan or griddle, large enough for tortilla to fit, to medium.  Medium high heat.

Spread half the cheese on tortilla out to about 1/4'' from the edge; then layer with scrambled egg, then layer the sausage and another layer of cheese. Top with second tortilla and gently press down evenly.

Pick up by the edges or with a couple of spatulas and place in hot pan for approximately 1 1/2 to 2 minutes.  Turn over and repeat on other side.  Remove and cut into serving pieces with a sharp knife or pizza cutter into pie shaped wedges.

OPTIONS:  Layer of thin sliced tomatoes;  Hot pepper cheese and mild sausage;  Bacon slices or shredded ham; or the possibilities are endless... use your imagination.

Serve with SALSA!!
