Oriental Turkey Lettuce Wraps

1 lb. ground turkey
1/2 cup grated carrots
1/2 cup diced red onion
1 package chinese noodles
1 tablespoon minced fresh ginger
3 tablespoons soy sauce
3 tablespoons sesame oil
1 tablespoon minced garlic
1 small sliced red pepper
1 head bib lettuce

Heat skillet, add sesame oil and turkey.  Brown turkey.  While turkey is browning, cook off chinese noodles; this should take about 3 minutes.  When noodles are cooked, cool with cold water and drain.  In skillet, add carrots, red onions, red peppers, garlic, and ginger.  Saute until tender.  While turkey and vegetables are cooking, wash lettuce in cold water.  Cut off bottom core, and peel off leaves one by one, leaving them whole.  Add noodles and soy sauce to turkey and vegetables.  Put mixture in lettuce leaves, using the lettuce like a tortilla shell.  Enjoy!
