Mike's Walleye on the Grill and Watermelon Summer Salad

Mike's Walleye on the Grill
Serves 4
Ingredients:
1 pound walleye fish ( may substitute any white fish)
2 tsp olive oil
2 tsp fresh lemon
1/4 tsp salt
pinch of ground pepper
2 cloves minced garlic
2 teaspoon fresh rosemary
Preparation:
Cut in 4 pieces.  Mix all ingredients and lightly brush on fish.  Wrap in foil adding cut up fresh vegetables for 10 minutes on grill at 300 degrees.  Cook your whole meal all at once.

Watermelon Summer Salad
Ingredients:
3/4 cup halved, thin sliced red onion
1 T. fresh lime juice
1 & 1/2 quarts seeded, cubed watermelon
3/4 cup crumbled feta cheese
1/2 cup pitted black olive halves
1 cup chopped fresh mint
2 T. olive oil
