Captain Creole's Jambalaya

Ingredients:
1 tablespoon olive oil
1/2 cup diced onions
1/2 cup diced celery
1/2 cup diced green bell peppers
1/2 pounds ground turkey
3 cups diced chicken breast
2 cups diced andouille sausage
3 cups diced pear tomatoes
1 teaspoon leaf thyme
1 teaspoon leaf oregano
1 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 tablespoon crushed garlic
1 tablespoon salt
1/4 cup "SASSY'' CREOLE SAUCE*
4 cups cooked rice

Preparation:
In a large 8 quart stock pot, add the oil over low heat.  Add all of the vegetables, ground turkey, and diced chicken.  Cook over low heat stirring constantly for about 15 minutes, or until the vegetables and pieces of meat are browned.  Add the sausage, seasoning, diced tomatoes and "SASSY" CREOLE SAUCE and cook for another 5 minutes or more.  Then add the cooked rice.  Mix well and serve.
