Grandma Bassett's Tabouli

1/2 bunch mint
1 cup fine cracked wheat (soak 15 minutes in 1 & 1/2 cups water or follow direction on package; some may require minimal cooking
1 bunch green onions, finely diced
2 bunches parsley, chopped
4 large tomatoes, chopped
juice of 4 lemons
1/2 cup olive oil
1 teaspoon garlic salt
1/2 teaspoon black pepper

Mix parsley, tomatoes, onions, and cracked wheat together in bowl.  Set aside.  Whisk lemon juice, olive oil, garlic salt, and black pepper together.  Add mint.  Pour over ingredients in bowl.  Serve with fresh pita bread or pita chips.
