1 can frozen concentrated orange juice
1 tablesppon water
1 small can Mandarin orange slices
1/2 cup chopped cashews
1/4 teaspoon salt
2 teaspoons vegetable oil
1/8 teaspoon black pepper
2 boneless skinless chicken breasts
3 cups leaf lettuce or other salad greens
In a small bowl combine 3 tablespoons of the juice concentrate, oil, salt, pepper and water. Mix and set aside.
In a large bowl toss together the salad greens and the cashews. In a large skillet heat to a boil about 2 cups of water. When this has started to boil, but in a steamer and then the chicken breats that you have coated with some of the juice concentrate. Do not let these touch the water, they are to steam for about 12 minutes until they are no longer pink. Put them on a cutting board and let them cool and using two firks, pull the chicken into small pieces. Add the chicken to the salad, pour on the dressing, toss and serve. Makes approximately 4 servings.
