4, 8 oz fresh Grouper fillets, skin removed
1 tsp Lemon pepper 1 tsp Lime pepper
1/2 tsp Dried Orange Peel
For the relish...
1 Mango, finely chopped
6 Chives, chopped
1 Tbsp Lavender Honey
2 Tbsp High-Quality Raspberry Vinegar
1 tsp Chili Pepper Flakes
Salt and Pepper
Lightly dust the Grouper with the lemon pepper, lime pepper and orange peel, then sauté in a liglthy buttered skillet 2-3 minutes per side depending on the thickness of the fillet and your personal tastes. While the Grouper is frying, whisk together in a small bowl the honey and vinegar until the honey is completely dissolved. Add the mango, chives, chili flakes and salt and pepper and gently toss together. To serve, place a small amount of spring mix on a plate and perch the grouper on top. Garnish with the mango relish and additional chives if desired.
