Red Onion Marmalade

Red Onion Marmalade (Maple Pork Topping)

1/2 LB Red Onions, Julienned
2T Vegetable Oil
3T Red Wine Vinegar
4T Sugar
2t Ketchup
Pinch Cayenne Pepper
Pinch White Pepper

Bring Pot of Water to Boil
Immerse onion in boiling water for 15-20 seconds
Remove from Water and set aside.
Heat oil in large saute pan , add red onion and cook until golden approximately 15-20 minutes
Stir in Vinegar, sugar, ketchup, cayenne pepper and white pepper.
Continue cooking until thickened slightly - approximately 5 minutes.
Remove from heat.
Serve warm.
