Sweet Potato Ravioli


2 Cup Left over Sweet Potato Casserole or (Yam Side Dish Mashed)
12 small squares of Brie
½ Onion Sliced and Caramelized
¼ C Chopped Nuts (Walnuts, Hazelnuts, or Pecans Work Best) 
Wonton Skins
1 egg  Egg Wash (egg whisked with water)
1 Handful of cooking spinach or Swiss Chard
½ cup spiced nuts
3 cup Roasted Turkey Broth (strained)
3 Tbl Unsalted Butter
Salt and Pepper

Mix onion, chopped nuts and sweet potatoes together
Lay out Wonton Skins lightly brush on egg wash
Place Brie Cheese in middle top with sweet potato
Place second wonton Skin on top and seal with rounded side of cookie cutter.
Add ravioli and butter to simmering Turkey Broth
Cook until translucent (about 2 mins)

Add cooking greens and wilt
Transfer to serving bowl and top with spiced nuts and serve
