Soy and Roasted Garlic Marinade, Delmonico Steak Marinade

SOY AND ROASTED GARLIC MARINADE:

Ingredients:
note: this recipe makes marinade for 10 12-oz. steaks
16 oz. Sweet Indonesian soy sauce
1.5 lbs. roasted garlic in olive oil
8 oz. white wine vinegar
8 oz. roughly chopped fresh oregano
2 tablespoons ground black pepper
1.5 oz. brown sugar

12-ounce buffalo strip loin steaks
salt and pepper (to taste)
3 oz. onions
1 tablespoon julienned cilantro

Preparation:
In a large mixing bowl, combine soy sauce, roasted garlic, olive oil, vinegar, oregano, and pepper.  Marinade steaks in mixture for at least half an hour and add salt and pepper to taste.  Fry onions until crispy.  Grill the steak to desired doneness, and garnish with julienned cilantro and serve with onions.

DELMONICO STEAK MARINADE:

Ingredients:
10 oz. olive oil
4 oz. minced garlic 
2 oz. chopped fresh rosemary
2 oz. cracked pepper

Delmonico steaks

Preparation:
Combine ingredients in a large mixing bowl.  Rub Delmonico steaks with marinade, and then refrigerate for at least 4-6 hours.  Grill steaks to desired doneness and serve.
