4 to 6 servings
1/2 cup bottled sweet-and-sour (duck) sauce
1 tablespoon plus 1 teaspoon soy sauce
1/8 teaspoon ground red pepper
2 pork tenderloins (1-1/2 to 2 pounds total)
1. Preheat the oven to 400°F. Line a rimmed baking sheet with aluminum foil, then coat the foil with nonstick cooking spray.
2. In a measuring cup, combine the sweet-and-sour sauce, soy sauce, and ground red pepper; mix well. Place the pork on the baking sheet and pour half the sauce over the top. Bake for 45 to 50 minutes, or until little pink remains for medium-well, or no pink remains for well-done.
3. Slice thinly and serve topped with the remaining sauce.
***If you like a spicier sauce, add more ground red pepper.
