Potato Pancakes

10 large potatoes
1 large onion
6 large eggs
1 teaspoon of salt
4 tablespoons of flour
2 teaspoons of vegetable oil (estimated)

Peel raw potatoes and grind them in a food grinder or do it by hand.  Grind onions the same way.  Put in rest of ingredients and mix everything together.  Heat frying pan with about a quarter inch of cooking oil in bottom.  Spoon in batter, keeping pancakes thin, and fry to a golden brown on both sides.

This amount should feed 10 to 12 people.  Enjoy!
