1 small (4 serving size) vanilla instant pudding 1/8 teaspoon each; cinnamon, ginger, all spice and nutmeg 1-1/2 cups half and half 1 - 1-1/2 cups canned pumpkin puree
1/2 cup heavy whipping cream, whipped into stiff peaks
Place instant pudding mix in a medium bowl and add spices, mixing well. Prepare pudding according to package directions using half-and-half. Let stand 5 minutes until thickened. Using spatula fold in puree until well mixed. Spoon into prepared pumpkins. Top with heavy cream whipped into stiff peaks; replace top and serve.
To prepare pumpkins: Microwave pumpkins (one at a time) on high for approximately 1 minute. Use towel to remove from microwave (be careful; if pumpkin gets too hot, it will explode). Cool. Cut off top and hollow. Reserve chilled until ready to serve.
