Marinated Tomatoes

8 large, ripe tomatoes, peeled
1/2 cup chopped fresh parsley
1/2 cup chopped celery
1 small onion (about 1/3 cup)
1 tbsp. sugar
1 tsp. salt (you can substitute garlic parsley salt)
1/2 tsp. fresh ground pepper
1/4 tsp. thyme (can substitute marjoram or rosemary)
1 cup extra virgin olive oil
1/3 cup red wine vinegar

Skin and slice tomatoes. Cut into 1/2 inch slices. Arrange in a shallow serving dish. Combine the remaining ingredients in a large jar with a tight fitting lid. Shake well to mix. Pour over tomatoes. Cover tomatoes and chill for at least one hour. (Best to marinate overnight). For variations, you can add chopped green peppers. This recipes can easily be halved for smaller portions. This marinate makes a good dressing for a green salad, too.
