(from Treasury of Tennessee Treats)
2 squares unsweetened chocolate
1/2 cup margarine (1 stick)
3/4 cup sugar
2 whole beaten eggs
1/4 cup flour
1 teaspoon vanilla
1/2 cup chopped pecans (optional)
pinch of salt
Melt margarine and chocolate in top of a double boiler until both are melted. Combine flour, sugar and salt. Add this mixture to chocolate/margarine mixture. Then add beaten eggs, vanilla and nuts. Bake in a well greased (you can also lightly flour) 8" or 9" pie pan. Bake in a 350 degree oven for 15 minutes or until the center springs back when you touch it lightly with your finger.
This is delicious with or without nuts and served either hot or cold. Try it hot with ice cream or cold topped with whipping cream.
