Sweet Potato Biscuits

2 cups sifted flour

4 tsp. baking powder

1 tsp. salt

2/3 cup Crisco

1 cup mashed, cooked sweet potatoes

3 tbsp. milk, or more

Sift dry ingredients, cut in shortening and blend in sweet potatoes. Add enough milk to make a soft dough. Add the milk slowly and only add enough milk to moisten the dry ingredients. Use a fork to mix as you add milk. The dough will leave the sides of the bowl. Knead lightly. Roll on lightly floured board to about 3/4 inch think. Cut into rounds with a biscuit cutter. Bake on an ungreased sheet at 400 degrees for 15-20 minutes. May be prepared ahead and stored in refrigerator covered with damp cloth or frozen until ready to bake. Mash potatoes may be flavored before adding them to the recipe. Or you can substitute 1 cup of sweet potato casserole as a tasty way to use leftovers.
