Country Sausage & Eggs

1 1/2 pounds sausage
1 beaten egg
1/3 cup milk
3 tablespoons onion flakes
1 cup crushed soda crackers
1/2 cup chopped apple
1/2 cup grated cheese paprika

Preheat oven to 350 degrees. Grease a ring mold, set aside. In a medium bowl, mix sausage, egg, milk, onion flakes, cracker crumbs and apple. Press into prepared ring mold. Turn out into a shallow baking dish with a rim and bake 3- 40 minutes until golden brown, remove from oven. With two spatulas remove from the dish and place on a platter covered with paper towels to absorb the excess grease. Prepare scrambled eggs (see recipe below) and place in the center of the ring. Sprinkle the eggs with the grated cheese and place in the oven for 2 - 3 minutes to melt the cheese. Sprinkle with paprika. Makes 4 - 6 servings.

Scrambled eggs:
Melt 1 tablespoon butter in a skillet. In a large bowl mix together 8 eggs, 2 tablespoons milk, 1/2 teaspoon salt & 1/4 teaspoon pepper. Cook eggs in skillet over low heat until done. Stir frequently.
