Turkey Barley Soup

Simmer your turkey carcass in 4 cups of water. Toss out the bones, add the leftover gravy.
Add:
2 chopped carrots
3 chopped celery stalks
3 chopped potatoes
1 large minced onion
1 quart crushed or stewed tomatoes

Cover and cook for 20 minutes.

Then add:
2 tablespoons chicken bouillon
3/4 cup barley
1 tablespoon parsley
1 teaspoon salt
1/2 teaspoon pepper

Cover and cook until the barley and all veggies are soft and mixture has thickened. Great with a hard crust bread.
