Salmon Patties

1 egg white beaten
2 TBS milk
1/8 tsp pepper
1 tsp dried minced onion
2 tsp dill dried or fresh
1 clove of garlic crushed
1 TBS pickle relish
1 7 ¾ ounce pink salmon with skin & bones removed
½ cup finely crushed wheat crackers
1 tbsp oil
1 tbs butter or margarine
2 tbs flour
½ cup milk
½ shredded Muenster or farmers cheese, or Monterey jack

In a bowl combine the egg white, milk spices, onion relish stir and add the salmon & cracker crumbs. Form into three patties, put the oil in a non-stick, get hot and brown both sides, should cook about 6 minutes total to get them cooked through.

To make cheese sauce, melt the oleo, and add the flour and a dash of pepper, add to that the milk, turn stove to medium low and stir until the milk thickens, then add the cheese, stir 1 minute more and pour over the patties. You can use peas instead of the cheese.
