Vietnamese Spring Rolls

Ingredients:
Vietnamese rice paper
1 cup of shredded red cabbage
1 cup nappa cabbage
1 container of sprouts (alfalfa, spicy sprouts, etc. you can find these in the produce dept. of your local grocer)
1 cup bean sprouts
1/4 cup loosely packed chopped cilantro(optional)
1/4 cup crushed peanuts
Salt and Pepper to taste
1 Tbl Sriracha (Hot Chili Sauce available in Asian market)
1/4 cup Sweet Chili Sauce (available in Asian market)

Method: Mix sprouts, cabbages, peanuts, and cilantro in bowl with Sweet Chili Sauce and Sriracha salt and pepper to taste.   Soak rice paper in a dish of temped water until pliable Remove paper from water and lay flat on a clean kitchen towel.  Place about 1/4 of a cup of the mixture in a line in the center of the paper.  Fold in both sides and the bottom.  Roll tightly towards the top.  Let sit about 10 minutes in the fridge to set up.  Serve with your favorite Asian dipping sauce.
