Crab Meat ala Georgio

Makes three portions


16 oz Alaskan King Crab meat
3 Tbls. mushrooms, sliced
3 Tbls. green pepper, diced
1 Tbls. butter
3 Tbls. sherry, meduim dry
1 cup cream sauce
1/2 cup whipped cream
3 Tbls. Hollandaise sauce
salt to taste


Warm crab meat in oven.
Saute mushrooms, green peppers, and pimento in butter for 5 minutes.
Add sherry and cream sauce, bring to boil and remove from stove.
Carefully fold in whipped cream and hollandaise sauce.
Season to taste.
Carefully fold in crab meat.  (Don't stir mixture, breaks easily).
Form patties and broil at 350 degrees until golden brown.
