Cranberry Nut Bread
2 cups flour
2/3 cup granulated sugar
1 ½ teaspoon baking powder
½ teaspoon baking soda
¾ cup orange juice
¼ cup (1/2 stick) margarine or butter, melted
¼ cup cholesterol-free egg product
2 teaspoons grated orange peel
1 cup chopped cranberries
1/3 cup chopped walnuts
½ cup powdered sugar
2 teaspoons water
- Mix flour, granulated sugar, baking powder, and baking soda in large bowl. Blend orange juice, margarine, egg product, and orange peel; add to flour mixture, stirring just until blended. Mix in cranberries and walnuts.
- Pour batter into bottom-greased 8 x 4 inch loaf pan.
- Bake at 350 degrees F for 55 to 60 minutes or until done. Cool in pan 10 minutes; remove from pan. Cool completely on wire rack.
- Mix powdered sugar and water; drizzle over cooled loaf.
