3 pounds shredded potatoes
2 pounds medium onions, chopped
1/4 cup parsley
3 tablespoons baking powder
5 tablespoons flour
1 tablespoon pepper
1. In medium mixing bowl, beat eggs. Add onion, parsley, baking powder, flour, pepper and salt to taste to beaten eggs. Mix well.
2. Add shredded potatoes to egg mixture.
3. Heat frying pan with 2 cups fryer oil. When oil is hot, spoon out latke mixture and fry on both sides until golden brown. Serve with sour cream or apple sauce.
