“ALMOST TIEDTKE’S” Pimento Cream Cheese Spread

1 1/2 cups Hellmann’s mayonnaise
1 4-ounce jar diced pimento, drained
1 teaspoon Worcestershire sauce
1 teaspoon finely grated onion
1/4 teaspoon ground red pepper
1 8ounce block extra-sharp Cheddar Cheese, finely shredded
1 8ounce black sharp Cheddar Cheese, shredded

Mix first 5 ingredients together, stir in cheese.   Holds up to one week in the refrigerator.


DUELING QUICHES FOR THE HOLIDAYS
Basic ingredients: 6 eggs, 1 9-inch deep-dish baked pie shell
In medium bowl, beat together eggs and selection of liquid and seasoning.  Set aside.
Preheat oven to 375 degrees. Sprinkle one selection each from Vegetable and Cheese/Meat columns evenly over the bottom of the baked pie shell.  Pour egg mixture over ingredients in pie shell.  Bake until knife inserted near center comes out clean, about 30-40 minutes.  Shield outer crust with foil to prevent overbrowning during the last 15 minutes of baking.

Quiche 1

1 cup skim milk
1/2 teaspoon paprika
Salt & pepper to taste
1/2 cup each thinly sliced celery, chopped red/green pepper & chopped onion sautéed & drained
3/4 cup shredded Cheddar cheese
1/2 cup chopped ham

Quiche 2

1 cup half & half
1 tsp. Italian seasoning
Salt & Pepper to taste    
3/4 cup    sliced zucchini, sautéed & drained
¼ cup each chopped, pepper & chopped onion, sautéed & drained
3/4 cup shredded Swiss cheese

Quiche 3

1 cup evaporated milk
1/2 tsp. garlic powder    
1/2 tsp. chili powder
1 can chopped green chilies, drained
3/4 Mexican cheese

Quiche 4

1 cup whole milk
1 Tbsp. grated lemon peel
1 pkg. defrosted chopped spinach, drained well
1/2 cup chopped grape tomatoes
1/4 cup sliced ripe olives
1 pkg. goat cheese (about ¾ cup)

3 boxes mousse mix (3.1 ounces each)
2 containers prebaked bakery brownies, no icing
1/4 cup Kahlua
12 ounces whipped topping
1 package (8 ounces) Heath English Toffee bits

Prepare mousse according to directions and chill.  Poke holes in the surface of the prebaked brownies and pour Kahlua over all.  Chopped into small pieces.  

Using a trifle dish, alternate layers as follows: crumbled brownies, mousse, crumbled candy bars, whipped topping; repeat layers.  Garnish with dusting of candy crumbles.  Let set overnight.  Serves 10-12.
