Kentucky Derby inspired recipes from Kroger

Honey Pulled Pork in a Crock Pot

3 tablespoons paprika
2 teaspoons salt
2 teaspoons black pepper
1/2 teaspoon cayenne pepper
1 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 cup honey
1/4 cup red wine vinegar
3 tablespoons olive oil
1 onion, peeled, sliced coarsely
3-3 1/2 lbs. pork shoulder, cut in half
8 buns, toasted
1 Crockpot plastic bag liner

In a medium sized bowl, combine first six ingredients with a fork.  Add the honey, vinegar and olive oil and stir until the mixture forms a paste.
Place plastic bag liner in crock pot. Place the onion in the bottom of the slow cooker.  Top with two pieces of pork and pour the honey paste mixture over the pork pieces.
Set crock pot on low and cook for 7-8 hours or until the meat is tender enough to be easily shredded with a fork.
Serve on buns, topped with coleslaw, if desired.  Refrigerate leftovers.

Orange Peanut Cole Slaw

6 cups chopped red and green cabbage
2 cups diced peppers – red/green/yellow
2 cups shredded carrots
1 cup diced red onion
1/2 cup chopped green onion
2 cups salted roasted peanuts
1/2 cup chopped cilantro

1/4 cup seasoned rice vinegar 
1/4 cup thawed orange juice concentrate
2 teaspoons grated ginger
1 teaspoon orange zest

(increase dressing as desired)

Assemble and refrigerate for 2 hours.
Keeps well for 3 days.

Chocolate Pecan Derby Pie

3 eggs, well beaten
1/2 cup granulated sugar
3/4 cup light corn syrup
1/4 cup butter or margarine, melted
1 teaspoon vanilla
3/4 cup dark chocolate chips
1/2cup chopped pecans
1 frozen or refrigerated 9-inch deep dish pie shell
10-12 Pecan halves
Whipped cream for topping
* 1/4 cup bourbon, if desired

Preheat oven to 350 degrees.  Combine first 5 ingredients and mix well.  Stir in chocolate chips and chopped pecans.  Pour into pie shell.  Arrange pecan halves on top, if desired.  Bake for 45-50 minutes, or until set.  Cool.  Serve topped with whipped cream.
* Add bourbon with first five ingredients, if desired
