Fresh, Healthy Summer Salad Just in Time for Memorial Day!

The holiday weekend is upon us and temperatures are hot!  How about a nice cool summer salad for your Memorial Day cookout.

Mary Pietras from Beyond Basics Health Coaching has a simple, healthy, and tasty recipe for this weekend!
 
Mary's Summer Salad:
 
1/4 cup red onion
1/2 of a chopped cucumber
1 chopped avocado
2 stalks of celery chopped

Mix ingredients in a bowl. Then prepare the dressing.
 
Dressing:
1tbsp Nutritional yeast
juice from a half a lemon
pinch of salt
3 tbsp. of organic mustard

Mix ingredients well, add to vegetables, toss and enjoy!
