Summertime Salad Recipes from the Meijer Stores

As the warmer weather arrives it's time to turn off the stove and toss together a salad for lunch or supper. Salads can be nutrition powerhouses if you have the right components. Colorful fruits and vegetables, protein and even whole grains all add texture and nutrients to make your salad delicious and satisfying.

Here are some recipes made with unique combinations of wholesome ingredients:

Broccoli Apple Walnut Salad

Serves 6

4 cups fresh broccoli florets (about 2 medium heads)
½ cup shredded carrots or matchstick carrots
1 Gala apple, chopped
½ cup walnuts, chopped
½ cup True Goodness™ by Meijer™ Organic Dried Cranberries

Honey Dijon Mustard Dressing:
¼ cup lemon juice
2 Tablespoon True Goodness™ by Meijer™ Extra Virgin Olive Oil
1 Tablespoon True Goodness™ by Meijer™ Organic Honey
1 garlic clove, minced
1 1/2 teaspoon Dijon mustard

1. In a large bowl, combine broccoli, carrots, apple, walnuts, and cranberries.
2. In a bowl, whisk together lemon juice, olive oil, honey, garlic, and Dijon mustard.
3. Pour the dressing over the salad and toss to coat.

Serve with grilled chicken or fish.

Blue Cheese Chicken Salad

Makes approximately 4 servings

1-1/2 pounds True Goodness™ by Meijer™ Boneless Skinless Chicken Breasts, cooked and shredded
¼ cup plain Greek yogurt
½ cup Hellmann's Carefully Crafted Dressing and Salad Spread
1 teaspoon fresh lemon juice
1 teaspoon True Goodness™ by Meijer™ Organic Honey
¼ teaspoon ground black pepper
¼ teaspoon salt
3 stalks celery, chopped
¼ cup True Goodness™ by Meijer™ Organic Dried Cherries
¼ cup True Goodness™ by Meijer™ Roasted Pecans with Sea Salt, chopped
1-2 Tablespoons minced red onion
¼- ½ cup True Goodness™ by Meijer™ Organic Blue Cheese Crumbles

1. Combine all ingredients, except blue cheese in a bowl and mix well until combined.
2. Fold in blue cheese crumbles.
3. Serve over a bed of fresh greens with True Goodness™ by Meijer™ Organic Multigrain Artisan Rolls.

Kale, Egg & Rotini Salad

Serves 10
2 cups cooked Meijer Whole Grain Rotini pasta
2 cups Earthbound Farm® Organic Kale
3 True Goodness™ by Meijer™ Organic Cage-Free Eggs with Omega-3 fatty acids, hard-boiled, chopped*
½ cup green onions, sliced
2 cups True Goodness™ by Meijer™ Organic Mushrooms, chopped
2 orange bell peppers, chopped**
1 (16 ounce) bag True Goodness™ by Meijer™ Organic Frozen Green Peas, cooked
1 large tomato, chopped
1 cup low-moisture part-skim Mozzarella cheese, cubed

Creamy Avocado Dressing
1 medium ripe avocado
¾ cup water
¼ cup fresh lime juice
1 garlic clove
1 teaspoon salt
¼ cup cilantro, chopped

1. Prepare pasta according to package directions. In a large bowl, combine rotini, kale, eggs, green onions, mushrooms, bell peppers, peas, tomato, and mozzarella cheese.
2. Creamy Avocado Dressing: Place dressing ingredients in blender.  Cover; process until smooth.  Toss salad with creamy avocado dressing.
