A vegan spin on tasty party favorites

How about a vegan spin on some of your favorite party foods!

(WTOL) - March Madness is almost officially upon us! Families around Northwest Ohio are watching basketball constantly these days. Locally grown and packed, Dei Fratelli products can be a game changer – creating successful viewing parties! For a twist, we're doing vegan recipes today. They're tasty and healthy!

Dei Fratelli products are made right here in Northwest Ohio, with all of their tomatoes are grown within a 50-mile radius for their three facilities!

How about a vegan spin on some of your favorite party foods!

Black bean Rice Burger (Vegan)

Prep Time: 20 min                Cook Time: 8 min                    Servings: about 6

• 2 ½ Cups Cooked White Rice
• 1 Cup Black Bean (drained)
• 1 14.5oz Can Mexican Chopped (drained) (½ Cup for recipe, reserve remaining for garnish)
• 1 Cup Garbanzo Bean (drained), Ground
• 1 tbsp. Olive oil

Seasoning
• ½ tsp. Cumin
• ½ tsp. Granulated Garlic
• ½ tsp. Salt
• ¼ tsp. Black Pepper

Directions:
1. Cook rice as per instructions and cool down.
2. In a food processor, ground the garbanzo beans into a paste.
3. In a separate large bowl, mix together the cool rice, black beans and Dei Fratelli Mexican chopped tomatoes.
4. Take 1 ? Cup of the mixture from step three and add to the ground garbanzo beans in the food processor. Blend together until incorporated.
5. Take mixture from the food processor in step four and add back to the mixture in the bowl from step three along with the seasoning and mix together.
6. Take four ounces of the finished mix (½ Cup measure) and press into patties about ¾ inch thick.
7. In a sauté pan on medium heat, add the tbsp. olive oil. When hot, add patty and cook for 3 minutes each side.

Serving Suggestions: Use your favorite burger bun and garnish with sliced red onion, avocado and top with remaining Dei Fratelli Mexican chopped tomatoes.

Black bean "Vegan Meatball" w/ Spaghetti Squash

Prep Time: 25 min                 Cook Time: 55 min                    Servings: about 6

• 2 Spaghetti squash
• 1 14 oz. Can Dei Fratelli Tomato Sauce 
• 2 ½ Cups Cooked White Rice
• 1 Cup Black Bean (drained)
• 1 14.5 oz. Can Mexican Chopped (drained) (½ Cup for recipe, reserve remaining for garnish)
• 1 Cup Garbanzo Bean (drained), Ground
• 1Tbl. Olive Oil
 
Seasoning:
• ½ tsp. Cumin
• ½ tsp. Granulated Garlic
• ½ tsp. Salt
• ¼ tsp. Black Pepper

Directions:
1. Preheat oven to 400?F. Roast squash flesh side down until tender, about 40 minutes.
2. Cook rice as per box instructions and cool down.
3. In a food processor, ground the garbanzo beans into a paste.
4. In a separate large bowl, mix together the cool rice, black beans and Dei Fratelli Mexican chopped tomatoes.
5. Take 1? Cup of the mixture from step three and add to the ground garbanzo beans in the food processor. Blend together until incorporated.
6. Take mixture from the food processor in step four and add back to the mixture in the bowl from step three along with the seasoning and mix together.  
7. Take one ounce each of mix and roll into balls.
8. Heat olive oil in large sauté pan over medium high heat. Add meatballs, turning them in the pan periodically until golden brown. About seven minutes.
9. Scrape the squash out with a fork and add to a sauté pan on medium heat. Add Dei Fratelli Sauce to pan and mix thoroughly.
10. Serve squash in a bowl and add black bean balls. Garnish with parsley.

Notes for Meatball: Above recipe gave us 23 meatballs at ? Cup size. 7 minutes on medium high heat.
