Kendall's Pavlova

4 egg whites
1/8 teaspoon cream of tartar
1/8 teaspoon salt
1 cup sugar
2 teaspoons flour
1 tablespoon apple or raspberry (or other fruit) vinegar
1/2 teaspoon vanilla
2 cups heavy cream
3 tablespoons brown sugar
Fresh fruit of your choice

Whip the egg whites, cream of tartar and salt with a mixer until frothy. Add the granulated sugar, flour, vinegar and vanilla, whip until stiff and glossy. Spread the mixture in a circle on a jelly roll pan lined with parchment paper. Bake in a 350 degree oven for 10 minutes and then lower the temperature to 300 degrees. Continue baking until golden brown (about 35 minutes). Turn the oven off, prop open the door and let the meringue cool to room temperature.

Whip heavy cream with brown sugar until stiff and fluffy. Spoon the cream into the cooled meringue shell. Top the cream with the fresh fruit of your choice.
