Pineapple Cheese Casserole

1 stick of butter
3 tablespoons flour
2 teaspoons pineapple juice
1 cup sugar
2 cans drained pineapple chunks
1-1/2 cups sharp cheddar cheese
1-1/2 cups crushed Ritz crackers

Melt butter, add flour and pineapple juice and stir until smooth. Add one cup sugar and drained pineapple. Pour into a greased casserole dish. Top with cheese and Ritz cracker crumbs. Bake for 30 minutes at 325 degrees. Great served with ham.
