2 lbs. yams or sweet potatoes cooked and mashed 1/3 cup butter 1 tsp cinnamon 1/4 tsp ginger 1/4 tsp. nutmeg 1/4 tsp. salt 1 cup brown sugar 2 tablespoon white sugar 3 large eggs, seperated 1/3 cup orange juice 1 tablespoon grated orange rind 1/2 cup evaporated milk approx. 1/2 cup pecan halves 9 - 10" unbaked pie shell
Add rest of ingredients except egg white to potatoes and mix well. Beat egg whites until stiff but not dry. Fold into potato mixture. Pour into unbaked pie shell and decorate with pecan halves.
Bake at 450 for 10 minutes, reduce heat to 350 and bake an additional 30 minutes or until pie puffs and is firm in the middle. Cool and serve with whipped cream.
