Andy's Restaurant Scorecard: Oh My Ganache!

(WMC-TV) - The family bakery with a "European twist" tops this week's restaurant inspection scores.

Oh My Ganache! Bakery, 616 W. Poplar Ave. in Collierville, earned our local High Score of the Week with a 99 on its March 25 health department inspection.

"We've always been great with the health department," said owner and pastry chef Elena Foulks. "We just try to do a good job!"

When we surprised her, Foulks was putting the finishing frosting touches on her homemade sugar cookies. Her custom event and wedding cakes boast a wall of ribbons won at international cake competitions.

Sure, she's a pastry chef, but Foulks is also a certified sugar artist. The bakery showcases a racehorse and a guitar. She sculpted both out of sugar.

Born in Russia, Foulks' tastes reflect European flavors -- like her Mozart cake with both white and black chocolate ganache and roasted hazelnuts.

"It's like visiting Europe," said Collierville's Robin Holmes, a loyal customer. "Her cake work is obviously award-winning, and they are the centerpieces of my parties. Makes it a lot of fun!"
