1 lb. Beef Stew 1/4 C. Butter 1 tsp. Olive Oil 1 Med. Onion, sliced 1- Bell Pepper or 1/2 different colored peppers each, 1/2 dice 1- Jalapeno, minced (optional) 1 Tbsp. Good Paprika 1 C. stock or Tomato Juice
Melt butter and oil in stew pot. Brown meat on all sides. Reduce heat, add onions until soft. Add peppers and paprika-- stir in stock. Let simmer 1 1/2 hours... stirring occasionally. Add more stock only as needed.
