Easy Asian Stir-Fry with Chicken
4 servings
Ingredients:
- 1 tablespoon peanut or canola oil
- 1 package chicken or leftover chicken
- 1 package (12 ounce) DOLE® Chopped Asian Blend Salad
- 2 teaspoons low-sodium soy sauce
- 1 teaspoon sesame oil
- 1/4 teaspoon garlic salt
- Crushed red pepper flakes, to taste
- Salt and ground black pepper, to taste
- Toasted sesame seeds (optional)
Directions:
- Heat oil in large skillet over high heat. Add chicken, cook until internal temperature of 165 reached. Add salad; stir 2 minutes or until cabbage has wilted and snap peas are bright green.
- 2. Remove from heat; stir in soy sauce, sesame oil, garlic salt and crushed red pepper flakes. Season with salt and pepper, to taste. Garnish with toasted seeds, if desired.
- 3. Serve over rice or noodles (gluten free noodles available at Meijer) or serve over Roasted Spaghetti Squash "Noodles" for a gluten-free meal.

Buffalo Cauliflower "Wings"

Ingredients:
- 1 large head of cauliflower, chopped into florets
- 1 cup favorite Buffalo Sauce
- 1 Tablespoon butter or oil, optional
- 1 cup milk
- 1 cup flour (use almond flour for gluten-free)
- 2 teaspoon garlic powder
- 1 ounce Blue cheese crumbles, optional
Directions:
- Preheat the oven to 450 degrees Fahrenheit.
- Chop the head of cauliflower into bite-sized pieces. In a mixing bowl, combine the milk, flour, and garlic powder. Allow to sit a few minutes before adding the cauliflower.
- Toss the bite-sized pieces of cauliflower in the milk mixture. Shake off the excess batter and place on a baking sheet prepared with cooking spray. Bake in the preheated oven for 17 minutes.
- While the cauliflower is baking, prepare the buffalo sauce. You can use sauce as is, or add 1 tablespoon butter or oil for a milder flavor.
- Remove the cauliflower from the oven and toss in the buffalo sauce. Place the florets back on the baking sheet and bake for another 6 to 8 minutes.
- Cool slightly and top with blue cheese crumbles, if desired.
- Serve with blue cheese or ranch dressing for dipping.

- ½ cup pineapple
- ½ cup strawberries
- 1 tablespoon dried cranberries
- 12 cashews
Directions:
- Place ingredients in Nutribullet. Fill to the max line with spring water.
- Extract and enjoy.
