Salsa, BBQ Sauce & Sauteed Veggies

Salsa

2 cups - tomato scraps and trimmings
4-6 oz. onion trimmings
4 cloves garlic
1 fresh jalapeno
1 tablespoon fresh cilantro

Blend together in food processor, salt to taste.


Sweet & Sour BBQ Sauce

Preheat saute pan, add 4 oz. of Balsamic Must (Saba Dressing) and 1 cup of the salsa and 1 tablespoon brown sugar. Let simmer and reduce to desired thickness. Use with any variety of fish, chicken, pork chops, etc. May be spooned over food and backed or broiled to form a glaze.

Sauted Veggies

Fresh garden vegetables sliced. Dredge in a mixture of 1/2 four and 1/2 cornmeal, dip in egg wash, then back in flour.

Heat saute pan, add olive oil, when hot, add veggies, brown & turn. If 1" thick, most will require approximately 90 seconds per side. Top with salsa and garnish with fresh blueberries, raspberries and lots of herbs.
