Luscious Lime Bars

Serves 9

1 cup Meijer white whole-wheat flour

1/3 cup Meijer confectioners' sugar

3 Tbsp. Meijer cornstarch

1/4 tsp. salt

3 Tbsp. Meijer canola oil

2 Tbsp. butter, softened

1/2 cup Meijer granulated sugar

3 Tbsp. Meijer cornstarch

1/4 tsp. Meijer baking powder

1/4 tsp. salt

2 large Meijer eggs

2/3 cup water

1/3 cup lime juice

3-4 drops McCormick green food coloring, if desired

  1. Make the crust:  Preheat oven to 350 degrees. Line an 8-inch pan with parchment paper or foil and spray with cooking spray.  Combine flour, confectioners' sugar, cornstarch and salt in a medium bowl. Add oil and butter; using clean hands, use your fingertips to blend the flour mixture until evenly combined. Mixture will be crumbly.  Firmly press dough into the prepared pan.  Bake until just barely beginning to brown, about 15 to 20 minutes.
  2. Make the filling: In a medium bowl combine granulated sugar, cornstarch, baking powder and salt.  Add eggs and whisk until well combined. Stir in water and lime juice (and food coloring if desired) and whisk until well combined. Pour filling into warm crust and bake until just set, 15 to 20 minutes (center will be a bit jiggly).  Let cool to room temperature on wire rack (about 1 1/2 hours).  Carefully grab foil (parchment paper) and lift out of pan.  Cut into 9 squares. Garnish with Lime zest and mint sprigs if desired.  Dust lightly with confectioners' sugar and serve.
