Maple Bacon German Potato salad

Serves 4 - 6


4 lb boiled and sliced

2 bunches green onions chopped

4 hard boiled eggs chopped



1 lb maple cured bacon diced

1 tbls flour

½ cp sugar

½ tsp salt

1 whole egg

¼ cp cider vinegar

2 tsp celery seed


1st place sliced potatoes in a large bowl

2nd Sprinkle with egg, and onion

3rd Cook bacon crisp and crumble on salad

4th Mix flour with sugar, salt, celery seed,egg and vinegar in that order

5th Add to cool bacon grease and cook over low heat stirring constantly till thick

6th Pour hot over salad.

7th Stir to combine and serve immediately
