I had this salad served at a friend's over twenty years ago. It was one of my favorites then, and it still is now. Overall, it tends to have a German flavor about it, but you can alter that by adding either bean sprouts or water chestnuts to get a more oriental flair if you prefer.
Ingredients
___ 1 lb spinach leaves thoroughly washed and torn into pieces
___ 1/2 head iceberg lettuce torn into pieces
___ 1 small onion chopped
___ 3 hard boiled eggs chopped
___ 1 cp croutons
Dressing
Ingredients
___ 6 slice bacon fried
___ 1 tbls flour
___ ½ cp sugar
___ ½ tsp salt
___ 1 whole egg
___ ¼ cp cider vinergar
Preparation
1st Mix spinach and lettuce
2nd Sprinkle with egg, onion and croutons
3rd Cook bacon crisp and crumble on salad
4th Mix flour with sugar, salt, egg and vinegar in that order
5th Add to cool bacon grease and cook over low heat stirring constantly till thick
