BBQ Salmon and Blue Cheese Coleslaw

BBQ Salmon and Blue Cheese Coleslaw- Chef Mike Rosendaul/Real Seafood

Honey BBQ Sauce (makes 1 qt.)

2 C. Ketchup
2 C. Honey
1/2 C. Coarse Mustard
1/2 C. Jalepeno Pepper (minced)
1/4 C. Rice Vinegar
1 tsp. Tabasco
3 oz. Brown Sugar
2 Tbsp. Curry Powder
2 tsp. Paprika
2 tsp. Garlic (minced)
2 tsp. Soy Sauce
4 tsp. Vegetable Oil
1 tsp. Worcestershire Sauce
2 tsp. Lemon juice
1 tsp. Black Pepper

Simmer all ingredients together in heavy sauce pan over medium heat for 15 minutes.
Put over top cooked Salmon

Blue Cheese Coleslaw (8 servings)

3/4 C. Vegetable Oil
1/4 C. Cider Vinegar
1 Tbsp. Sherry
1/4 C. Shallots (minced)
1 tsp. Garlic (minced)
1 Tbsp. Kosher Salt
2 Tbsp. Parsley (chopped, fresh)
1 tsp. Black Pepper
1 1/2 C. Blue Cheese (crumbled)
8 C. Shredded Cabbage

Place vegetable oil, cider vinegar, sherry, shallots, garlic, kosher salt, parsley, and black pepper into bowl and stir well.  Add shredded cabbage and blue cheese... fold in.  Serve within 1/2 hour.
