Smoked Sausage Stuffing

2 ounces melted butter
8 ounces celery, diced
8 ounces onion, diced
2 ounces carrots, shredded
8 ounces smoked sausage, cut into 1/2 inch moon pieces
3 ounces slivered almonds or pine nuts
1.5 quarts chicken stick, heated
1 pound dried bread cubes
1/4 teaspoon garlic
1/4 teaspoon thyme
1/4 teaspoon oregano
1/2 teaspoon black pepper
1/2 teaspoon rosemary
1/2 teaspoon ground sage
1/2 teaspoon salt

Saute onions, celery and carrots in butter until the onions are transparent. Then add the sausage and almonds, combine with the bread cubes. Add the seasonings, chicken stock and mix thoroughly. Place in a buttered pan and bake for one hour at 350 degrees.
