Marty from Williams-Sonoma shares Sweet Potato Soup recipe

Sweet Potato Soup
4 tbls butter
2 carrots chopped
2 stalks of celery chopped
1 cp chopped onion
1 tsp dry thyme
4 cps cooked sweet potatoes
4 - 5 cps chicken stock
1 tbls concentrated chicken stock (Optional)
3 tbls brown sugar
1 tsp cinnamon
1 cp heavy cream
Salt and pepper to taste
In large pot melt butter
Sauté carrots, onions, celery and dry thyme in butter till onions are translucent
Add sweet potatoes, stock, stock concentrate, brown sugar and cinnamon
Simmer 15 minutes and puree
Stir in cream Add additional stock if needed
Season to taste
