Low Carb Potato Salad

Low Carb Cauliflower Salad-- Syd & Dianne's

Serves 4 - 6

1 Large head of Cauliflower, steamed to crisp tender and cut into 1 inch pieces   Tip: steam the whole head then drain and take apart.  It's easier to get out of the pot!)
4 Hard boiled eggs, chopped
1/3 Cup chopped celery
1/4 Cup chopped onion or 1/2 cup chopped green onions
1/2 tsp celery seed
3/4 - 1 Cup Mayonnaise
Salt and Pepper to taste
3 - 4 Tablespoons fresh chopped parsley

Combine all and serve cold. 

OPTION: Delete mayonnaise and add 1 - 2 tsp fresh chopped garlic and  1/ 4 Cup Incredible Salad Dressing.  (A chopped anchovy is pretty good too!)

Low Carb Mashed Cauliflower

Serves 4 - 6

(Tastes like mashed potatoes)

1 Large head of Cauliflower cooked until very soft
2 oz butter heated with
3/4 cup of heavy cream
1/2 cup parmesean cheese
salt and pepper to taste
Freshly grated nutmeg

Drain cauliflower.  Keep warm.  Add hot butter and cream and mash, or use stick blender or food processor to puree.
Add parmesean and salt and pepper to taste. Grate fresh nutmeg  over top and stir. 
Serve hot.
OPTION:  Substitute a Butternut Squash that has been oven roasted until very soft.  Omit parmesean and add a touch of cinnamon and Splenda (to sweeten if necessary)
