Scotch Eggs- Gourmet Curiousities

6-8 Hard Cooked Eggs
Flour
Fine Dry Breadcrumbs
2-3 Uncooked Eggs, Beaten
3/4 lb. Bulk Sausage
Oil for deep frying

Preheat oven to 400.
Shell the hard cooked eggs and lightly dip them in the beaten.  Roll them in flour and wrap completely in a thin layer of sausage meat.  Paint the sausage with additional egg and roll in breadcrumbs.  Fry in 370 degree deep fat 2-3 min. or until the breadcrumbs are golden brown and the sausage firm.
Place in a baking dish and bake, uncovered, 10 minutes.
Serve cold.
You can slice them to serve if preferred.
