Jazzy Melon Trio Gazpacho

Serves 8-10

1 plus ¼ C Cantaloupe, diced

1 plus ¼ C Honeydew, diced

1plus ¼ C Watermelon

4 Ripe Tomatoes, cored and diced

½ English Cucumber, peeled and diced

¼ c Red Wine Vinegar

1 T Extra-Virgin Olive Oil

Salt & Fresh Ground Pepper to taste

  • Place all ingredients in a large mixing bowl reserving the ¼ C of each melons ,Mix well
  • In a food processor puree mixture until smooth
  • Season with salt and pepper to taste
  • Chill well


  • Top each serving with a few pieces of the reserved small diced melon
  • Snip fresh chives on top
